I'll check the price and see. Angle would be great for hanging sausages also. Thanks SM!

Mile, have a look at 3/4 equal angle. Then use it the opposite way to this pointing upwards, v that should give you the support you need.

I grabbed two more patio paving stones to put inside on the floor. Extra weight to help keep it secure. I plan to drive some rebar into the ground and run wire to provide extra stability.

I have been running my AMNPS non stop in there non stop to get the pine seasoned.

I had a pork neck that I cured as a Christmas ham (2% salt, 6% sugar, cure #1, pickling spices, cinnamon, cloves) which I pulled out of the dry cure today and put it in this ham stocking.

I'm going to cold smoke it with hickory pellets starting tomorrow morning. I ordered the aluminum angle but it probably won't be here until next week. So I screwed in a section of 2x4 above the door to hang the ham.

I get the feeling I'm going to be tinkering with this smokehouse for a long time haha.

So today was pretty hot. About 88 degrees and not much wind. I have been having issues keeping the AMNPS lit. I've been doing some more research and found this thread http://www.smokingmeatforums.com/t/244958/air-flow#post_1578624
Which talked about air flow problems. I think I will add another two air vents based on DaveOmaks comments on that thread about airflow.

One at the bottom right and another at the top left of the back side.

I finally found some mesh on ebay that ought to work and wasn't too expensive.

Its 2140 hrs here and the outside temperature has dropped enough that it looks like the airflow is working now.
crankybuzzard crankybuzzard here ya go! :)

Inside shot

There is so much smoke in there that the camera flash can't get past it.

Mike....  Afternoon....   FWIW, Your smokehouse acts as a chimney....   If the temp inside the smokehouse is warmer than ambient, the air inside the smokehouse will rise....   If the air inside the smokehouse is about the same as ambient, the air will not move...   If the air inside the smokehouse is colder than ambient, the air will "fall" because it is denser than the outside air.....   Sooooo, when cold smoking, it is necessary to have a bit of heat in the smokehouse to at least start it drawing in air from the bottom vents...   If your smoke source will put out enough heat to keep the smokehouse above ambient, your good to go...  If not, a small heat source may be necessary....

I'm not sure what conditions were when all this happened but I'm thinking the smokehouse was cold...

Lots of progress today since I had some help.

Lower vent with sliding vent cover to adjust airflow.

Upper vent with some smoke
Inside with the AMNPS running to see how airflow is working and to start curing the inside and maybe identify where I need to seal it. I've got 4 2x4s set in the walls to hold racks.

Nice and smoky!

Crooked door. I really don't like those hinges so I may replace them with something sturdy later.

Still more work to do, but I'm making progress.
I would be more dissapointed if some sold me that thing as a shed!

That is going to be a great smokehouse! How much to ship to the U.S.?

I'm on vacation in Cornwall at the moment so no updates to the smokehouse. Dave thank you for the post on drafts. That helps alot, not only with the smokehouse but with the woodburner in the house! Its been awhike since I got to play with fire.

I brought some smoked Monterey jack along and its a hit with scrumpy :)

See y'all in a few days!

The 10' of QMatz from Todd arrived before vacation so I'm trying it out today with some cheese. I cut one 38" long which is the width of the aluminum angle I'm using. I also ordered one of the adjustable tube smokers to try.

More progress to come this week (I hope)

pit 4 brains pit 4 brains probably a hell of alot haha. You could probably have a carpenter build you one for cheaper than the shipping and cost in sterling pounds (£188 x $1.40 rough exchange rate)

Haha, well you can build one on the sly and tell the Missus it's my fault.

Mike, you are going to have to stop putting Photos up, you are going to get me In trouble if I build one of those!!!

Eureka! I was in the shed looking for a bicycle tire pump for my kids bike and found a 25m extension cable that was left in there from a work crew. I ordered one today but I wanted to test the hot plate out to see how if it will work out.

Extension cable ready to go.

Temp difference after a few minutes.

Now I've got some other ideas to play around with, namely lining the interior with foil for insulation
cutting some more draft vents in there.
A little box for the thermometer to rest on outside.
Building some small shelter for the extension cable reel
Cutting a notch in the door so the cable isn't being pinched.

I need some more advice on sealing hardie backer board. I've gotten some more work done. Originally I lined the whole thing with aluminum foil to see how much heat that would get. It only raised the ambient temperature 30 degrees F. I cut two more vents, one was to attach 10' of aluminum duct for cold smoking using the AMNPS.

So I've lined the bottom with backer board. I will be getting silicone sealant to seal all the gaps between the boards. I sanded the edges of the backer board that broke uneven and I am planning to use the silicon to cover those edges. Unless there is a better way?

I vacuumed all the dust up inside before replacing the paving stones in the bottom and I will wipe down the backer board with a sponge to get any stray dust.

First time using backer board so I broke a few pieces which is why this is looking like Frankenstein's monster.
Vent for duct

New airflow vent

Interior airflow covered with aluminum mesh

Added 3 2x4s to support the backer board

Back wall

Front piece to protect the door

Right wall

Left wall

Unfortunately I had to cover up the new cold smoke vent for now. Either I will have to cut a hole through the backer board and attach some duct to it or figure something else out. there is a gap of about an inch between the tongue and groove and the backer board.

Thoughts on some improvements? The backer board is 12mm and £11.70 a sheet (4x3) plus 20% tax. So I'm loathe to buy more of that.

Another update, the hot plate hasn't panned out. I can't get enough heat.I checked with an electrician to see how much it would cost to wire up an outdoor outlet with buried cable where I dug the trench and he quoted me at £185. Which was the almost cost of the shed. Out of my budget.

Now we're going with propane. Going to use the turkey fryer I have for the heat source. A quick test got the temps up to 130F in about 20 minutes with the flames just barely burning. I have to go to a gas supplier maybe this week to get an adapter to convert to a UK propane tank and hopefully find a thermocouple fitting I read about on here in case the flames go out so I don't have an IED on my hands.

I have looked on amazon and ebay and haven't found smoker elements any that are dual voltage or 240v unfortunately. I have transformers to step down our US electronic stuff but anything with a heating element tend to have a shorter working life.

Most hot plates have a temp protection snap switch...   Removing it will allow for the hot plate to get hotter....  other precautions NEED TO BE DONE if you go that route...  To save the trouble, get a bare Calrod element with controller.....

https://www.amazon.com/s/ref=nb_sb_noss?url=search-alias%3Daps&field-keywords=smoker+elements

Well, use a heating element out of an electrical appliance...   and a temp controller from that appliance....
