Pineapple bratwursts...

We just love hyvees pineapple bratts, so with anything good you buy at the store one can only imagine homemade could be much better. With that being said does anyone have a pineapple Brat reciepe that they would be willing to share? Or any experiences they would be willing to share.

I haven't made them, but a few have had issues with fresh pineapple in natural casings.  It seems that the pineapple weakens the casing and causes blow outs etc..

 

Please share your experiences, it sounds great.

Just thinking out loud here, but I wonder if it would work with those mostly dehydrated pineapple chunks instead of fresh?  Should not get the juice interacting with the casing that way (or not as much).  My wife brought home a container of some 80% dehydrated (my estimate) pineapple bits from a local farmer's market.  No brand name, probably came in bulk and were divided by the market.  Still soft enough for a nice mouth feel, but not crunchy like banana chips and other dried stuff.

 

I wonder how well something like that would work?

Pineapple contains an enzyme known as bromelain, which is a natural meat tenderizer. Reconstituted, it's the primary ingredient in many commercial meat tenderizers such as Adolph's, McCormick's, etc. I've used fresh pineapple in the past to tenderize meat and it works well, as long as you don't use too much for an extended period of time. Otherwise, the meat starts getting mushy and soft. I suspect that was your problem.

 

Papaya (papain), and Asian pears (calpain) all work pretty much the same way.

Len Poli lists at least two recipes that use Pineapple. One uses Pineapple juice and the other uses Pineapple flavoring if that helps at all.......

Thanks guys, I will have to check out lens recipes. I was also thinking dehydrated pineapple. I have some I purchased, but I don't have any more pork to grind as of now and my next hog does not get butcher till they come back from the Spencer fair in northern Iowa. Will sure try some then!
