Hello, Saturday my wife and I stopped by a little meat market near our house that I have had my eye on and picked up a brisket flat. Apparently they sold the end with the cap to someone making their own ground beef. Seemed like a good amount for our little household. Pics are as the day went on, took about 10 hours total using Mesquite on the Traeger and we were pretty pleased. My first q-view. Took it off at 195 IT.
If I can get my seasoning right I may be satisfied, must try again next weekend!
