So the new smoker arrived Monday. We've had constant rain and I'm pretty sure that if I were to pull a brand spankin' new smoker out into the rain, Miss Amy would Kill me Dead. So after four days, I finally snapped! We have a two car steel out building so I swung the doors wide open, parked the Open Range just inside the doorway and lit her up!!

Following the directions I sprayed the smoke chamber and cooking grates with cooking spray and added about a chimney worth of unlit coals. Then dumped a full chimney of lit coals on top and added a few mesquite chunks. Opened the spinners full throttle and the thing hit 250 in about 5 minutes.




Brought it up to 350 for an hour, per the directions, then settled it at about 300 and threw on some burgers


Buns toasting on the upper racks with Kirkland 1/4 lb patties on the grill grate.


And the plate! I know burgers are pretty boring q- view but that was about all the time I had to give it today. Definitely looking forward to putting it through the paces over the next few weeks!!
 
I love burgers Lance! We had some rain here today too, nothin like yall have had, but it was a nice change from dry 90s.

Nice smoker, way to break her in!

Good luck with the new toy. I like a duel use feature and was wodering how those style smokers were. What make and model is it?...JJ
 
Everything looks good from here.  Gotta like a smoker you can grill on, or is it a grill you can smoke on?  Anyway, so far so good, hope your weather dries out. That way you can get outside and have some fun.

Thanks JJ! It's The Good One Open Range. One thing I like is that the grill grate is the same size as the smoke grate. That works very well for me and the way I like to do ribs. Also handy for any reverse sear. I'm also a big fan of covering all the bases with one unit. Haven't smoked on it yet but I picked up some spares, beef ribs and a packer to go with the shoulder I have in the freezer. So we'll see how it smokes over the next week or two.

Nice looking cooker!! I know the feeling since I just got a new offset myself. Must... Cook... Something... I'll leave it at that, no hijacking. It will be fun to see when you really put that baby to the test! Thanks for sharing! What did you cook yesterday?

Got some ribs through it on Saturday. They came out perfect! I bet you're excited about your new procurement. Can't wait to see it in action.
