its 4.5 hours in with an internal temp of of 131 its coming along nicely plus I also put some almonds on there as well and they were tasty. More pics later when its all done.

how long should this rest for before i start pulling it ?? is there a certian temp i should be looking for it to get down to.

was in the smoker for 9 hours and then wrapped and finished in the oven because it was pouring for three hours and water was going right down the stack onto the meat. brought up to 205 internal  temp and now its going to be resting for awhile before i pull it apart mmmmm i cant wait to unwrap it

How are you letting it rest? On the counter,warm oven,towels wrapped in a dry cooler?

not bad for my first long smoke. everything else i have done has been small/short 2-3 hour cooks. I will say it sucks babysitting a cooker that small for 8 hours. the temp was allover due to inconstant heat and its hard to regulate so it could be better but over all it could have been much worse. its a little dry but no where as dry as it looks in these pics so there is much to learn and i think it will make me a better cook when i get a bigger cooker with a more consistent heat source.

i was running out of time and forgot my cooler at camp last weekend plus everybody was hungry so i just left it wrapped in foil on the counter this time but next time it goes in towels in the cooler.

I would just let it sit a half hour if you can stand it! It's easier to rest them when you can't smell them!

Ilet it rest for about 35 minutes before pulling it apart and it was sooooooo hot i burned my fingers lol
