Hey all, 

Happy Monday, if that's logical to say

 ..... The family got together (about 14 of us) this last weekend to celebrate some birthdays and just get some family time in. I decided to do the cooking, and pulled pork was on the menu. 

I got 2 7lb boston butts from the local store, got the Primo set up for indirect with a couple chunks of Hickory smoking at 225* and let the cooker go for 17 hrs. The cook was controlled by a Digi Q DX2 and that thing worked like a champ the whole time. This is my 2nd 16+hr cook and I've been amazed at how well the DX2 has worked for me. This was the first time however that I did have to add more lump to the smoker. I think I need to do a full ash cleanout before doing these long cooks. 

Anyways enough talking here's a couple pictures. 



I didn't get any pictures of it pulled, the family didn't want to wait any longer. 
 
That's an awesome looking couple of butts. I'm sure everyone enjoyed them. It would be nice to have a commentary of your prep and pics of that and the pulled meat.

I would have liked to document the process better but I was super crunched for time with this cook. I will say that I did trim the fat cap down to the meat for this cook. I recently saw a video stating that the smoke and rub flavor won't penetrate the fat cap so I cleaned up as much as I could and cleaned out some of the fat around the horn as well.
