Happy Monday, if that's logical to say ..... The family got together (about 14 of us) this last weekend to celebrate some birthdays and just get some family time in. I decided to do the cooking, and pulled pork was on the menu.
I got 2 7lb boston butts from the local store, got the Primo set up for indirect with a couple chunks of Hickory smoking at 225* and let the cooker go for 17 hrs. The cook was controlled by a Digi Q DX2 and that thing worked like a champ the whole time. This is my 2nd 16+hr cook and I've been amazed at how well the DX2 has worked for me. This was the first time however that I did have to add more lump to the smoker. I think I need to do a full ash cleanout before doing these long cooks.
