I like stuffed pork tenderloin and it makes a quick meal.Before and after tenderloin shots butterflied and pounded flat.
I sauteed some hot Italian sausage with minced garlic and mushrooms,then chopped up some chives
I mixed those ingredients( after chilling) with a pack of cream cheese and spread the mix on both loins.
I then wrapped up the loins and added rub,before smoke and after smoke shot.Cooked at 225 for 2 1/2 hours with apple until an IT of 145# was reached
