Hopping on the smoke train!

Hello everyone I am new to the smoke world. I have been hunting for about 5 years now and am getting tired of paying so much to get sausages, slim jims and anything else made for me. I process and grind the meat myself so I figured I might as well do this side of it too. I have been doing some research on the type of smoker I wanted to go with/build and in the process my couisin who runs a kitchen informed me that he has an industrial kitchen warmer I can have. The hearing elements don't work but I plan on making it a gas smoker anyway. When I get the unit I will post some pictures and I am sure will have a few questions about setting up the new rig

Welcome to the board! It sounds like you're starting from a good background. Many people here post detailed descriptions of making different styles of sausages, etc., with different types of smokers.

I just moved back to MN from Chicago and getting back into hunting (deer, pheasants, maybe ducks and goose again) but looking forward to processing my own wild game again too!

I finished this build and posted on another thread. Turned out great and I am excited to smoke some more. These are the ribs I got as a trial run and they turned out amazing.

I hunt everything!! From bear to rabbits. And birds turkey to doves. I love in South eastern pa but have a cabin in northern pa. About 10 miles from my house is where we do a lot of goose hunting. We are right on the migration belt for Canadians and snow geese. So we have 2 really good parts of the season when they are heading south and then North again

I do whitetail every year - haven't done pheasants since I moved to Chicago. Now that I'm back in MN I will definitely do them again.

 

Looking forward to some turkey hunting too.

 

I used to hunt ducks and geese but really didn't like the taste of the meat and decided to no longer go after them (although duck hunting was by far my favorite).

 

Best sausage I have ever eaten was wild shot duck, goose, blue berries, wild rice, and other secret ingredients. Not sure how they did it - but it was borderline illegal it was so good.

Yeah pheasant hunting is fun although here there are so rare. There are a lot of pheasant farms though. It's pretty funny to watch people there. They shoot them as soon as they are released and don't get the hot of hunting for them
