Ok I did my first brisket today - was supposed to be yesterday but that didn't happen - just a 7lb flat as that was what was available

First I want to give a shout out to Al for the advice -- a true gentleman

So here is what I did - - marinade for a day then before the smoker I put the salt/pepper and butcher BBQ rub then into the smoker @ 230 - when the IT was at 147 I went out and ran some errands as I figured I had a while before it hit the stall and i'd wrap because I kept reading that the stall is around 160-165 IT... when I got back almost 2 hours later the IT was down to 142. No temp change on smoker .

So I looked around here and read about a "negative stall" so I wrapped it in foil and back in smoker. Well that did as within half an hour the temp was climbing. Got to 199 IT then I wrapped it - 1.5 hours later I sliced it and my first brisket was a success

I was lucky about getting it done for dinner because of the early stall (147 IT) is that common and for the temp to go backwards???

147 IT down to 142???

And when I read about patience when smoking  --- truer words were never spoken

What kind of thermometer were you using for temp? If it was a probe, was it possible that you may have stuck it in a thicker part of the brisket for that 5* temp difference? I think I remember having one brisket seem to go backwards on me, but I attributed it to the thermo...

Actually, back to the thermometer, if it's off by 10 degrees or so, that could be why you were seeing a stall earlier than you expected to??
 
The thermometer is a Maverick 732 with the probe in the thickest part of the flat -- when I put it in the temp was at 136 IT then I left the house when it was at 147 IT only to come back and it was at

142 IT - - I never moved it and also used a thermopen to double check and it was the same.   Then I looked around the forum and read about the "negative stall"  I just thought the 147 IT stall was real early as I kept reading about stalls happening at 160-165 IT --- and this being my first one I was a bit confused/worried
