My name is Jody.  I own and operate Jody's Texas Pit BBQ food trailer in Lubbock, TX.  I have an 8.5x22' trailer with twin Pitmaker Vaults.  Our signature sandwich is the "Texas Cheese Steak"  We take chopped brisket and mix it with grilled bell peppers and sweet vidalia onions, mix it together and put it on a hoagie roll with pepper jack cheese and bbq sauce.  Here are a few pics of my rig.
