Burned ends from chuck(and a chicken)

My daughter wanted burned ends for her birthday, so I picked up a 3.5 pound chuck roast.

I part them before cooking, it makes it easier to find the grain of the meat when it's time to cube them.


On the kettle with 3 pieces of apple wood-


Did I mention chicken? there are sweet potatoes in the foil-

I like the burnt ends from chuck! great idea. How long did they take? Temp?

Everything looks good there!
They take about 5-5.5 hours total, I cook to an IT of 185°,about 4 hours give or take, and then cube and sauce and back on for another hour. I give them a squeeze with tongs, if they give easily, they're done. FWIW I did temp a couple and they were 205°.

The sauce is SBR Hickory and Brown Sugar, I like it on beef.
