Hi I new to the forum, my name is Robin and I'm from northern Ontario Canada. I built a texas style smoker about 18 years ago (before it was fashionable) and used it for a number of years, I must not have had the dimensions correct because it was difficult to control the fire to get good results. I have a collection of 5 different smoking appliances now (much to my wife's dislike) Right now I use a Trager texas pellet unit more than anything else just because it's easy. I also have a charcoal/wood burning rotisserie cooker I use for pigs or large roasts, my largest cook on it was 180LB of beef for a large party of over 400 people (took forever). I am currently in possession of a 1000 gallon propane tank I want to turn into a big trailer mount BBQ. I also have been experimenting with a type of downdraft  gasifier system to get a fairly clean burn on the wood. Any help would be greatly appreciated. I own a machine and welding shop with a CNC plasma cutter so any work I need to do is easy to make happen. Looking forward to meeting you and getting some feedback.
