We decided on a compromise. I'll cook to pull and when it's done we'll tear a chunk off to have with green beans & taters tonight and I can pull what's left.
I had a nice 3 1/2# piece. Slathered it with Lea & Perrins Bold and coated with my beef rub last night to rest in the fridge.
It went into the offset at 11:30am with the smoker running 150 to 180.
At 1:15 it hit 150 and got foiled.
Just watching it now, adding a stick now and then and enjoying cold Bud & a beautiful day 😊
