Hello. I am wanting to build a smoke house to smoke salmon here in Alaska. I have all the two by fours and plywood to construct a nice sized smoke house. I've never smoked anything before and do not know anything about smoking.
My question is will it be safe for me to use dead red and yellow cedar logs instead. Someone told me that I cannot use Cedar. I'm don't think this is true that's why I'm asking here. They are dead cedar logs.
I live in a place where there are many around. I would like to cut them down and Lincoln log them on top of each other to create a good walk in sized smoke house.
Thanks for your thoughts and suggestions as I'm new to this.
