Just joined SMF. I'm a smokeaholic! Currently have 5 smokers. Started with a brinkman dime(R2D2). Then got an offset stick burner. Added an electric 40" masterbuilt. Then a buddy sold me a gas masterbuilt that I did some simple mods to and use charcoal and wood chunks. I finally broke down and bought a Traeger Pro Series 34 Saturday 7/2/16. Woohoo!! Smoked a pork butt/2 whole chickens/a brisket and about 25 chicken legs and thighs. Everything turned out great except skin on chicken. I am concerned about the probes in the new unit. Pork was at 183 with built in Trager probe but registered 200 when checked with dial probe that I have used for years.
 
Hey Pig slayer welcome to the site.  I too am a smokeaholic, and I invite you to join our smokeaholics anonymous 12 step program.  I  have a gas smoker that I've considered converting to charcoal.  What are you using as a charcoal basket?  Good luck and good smokin'.

I used a piece of stainless sheet and drilled holes in it and then fabbed into a firebox. I set it right on top of the burner.
