Nothing says freedom like lighting the pit at 4 am

Doing a whole day today, brisket, ribs and chicken, will post along the day, and keep this thread going. Looking to be a 11-12 hour cook in total.

5# brisket flat
4 racks baby backs
1 rack spare
32 chicken wings

#1 make a plan, and work the plan

3.5 hours in, the brisket is at 170 internal temperature, sauce is on, and the fire goes on.. I'm spritzing with apple juice as well. pit temp is 215-240. I will not wrap or foil this guy since it's moving right along and I've budgeted 10 hours before resting.

Baby backs in.

Checked the brisket with an instant read, the probe is reading about 10 degrees hotter than instant and there is definitely too much resistance. It's got some cool to go yet

Smoked a brisket yesterday as the forecast here in PA is iffy for a long smoke..
