I would like to get a bit of information on different styles of smokers as I'm getting a bit confused.
My first question would be besides the many different style of smokers is the main difference between hot and cold smoking just the temperature or the smoker its self.
If using smoking pellets is there a difference between burning the pellets and letting them smoke away to putting the pellets in a steel/cast dish and heating the bottom and letting them smoke like that.
I have seen offset bbq smokers using pellets or wood. I assume in this case the pellets are burned the same as you would with wood. Would I be correct to say this would be more like a hot smoker and not suitable for cold smoking applications.
I have started making a vertical smoker and plan to have an electric heating panel and cast plate to burn the pellets and will also make allowance to be able to burn the pellets too. Is it worth adding a fire box too?
I plan to try fish, bacon, ham and small briskets.
