Well I started out at 273 but thought the briskets was cooking to fast so I bumped the temp down to 255 my goal was to pull them at 2:00 and I ended up pulling them at 1:15 for the first one @ 202 and the second- smaller brisket 1:35 @ 198.

What a great looking meal...beautiful brisket, and pie to die for!  Can't get any better than that.:drool:
