i need HELP!

We are turning a pig for my husbands birthday this weekend.  We had no way to boil the pig and were forced to skin it.. yes this is crazy and we are sad.. but its what we must work with.  There is no help anywhere with turning a pig without skin.  We need to learn how to not start a fire and keep the juices in as well.  What should we do??? anyone?? its a 230lb pig.
