I have two 7lb pork butts to smoke for the holiday weekend. I would really like to do them overnight, but I am having a heck of a time keeping my AMNPS burning. So, looking for some advice:

1) Anyone with an MES30 have tips for keeping the AMNPS from burning out? (Aside from what the instructions say, because I've followed them every time I've used it...) I always pull the chip box and loader out a bit and open the vent. I still usually have to light it several times, but that would defeat the purpose of doing an all-night smoke.

2) Can I use the water pan? Not sure what "generation" my smoker is but the pan is the width of the smoker above the chip box.

3) Any other ideas are welcome as this is my first big smoke.
