Started at 7AM, will my butt be done by 3PM?

I just did a 10lb yesterday that I cut in half to cook quicker. The highest my MES goes is 275•. I started at 8am and finished 5pm. I didn't trust my probe and I was actually done faster. So it can be done.

I started a 4.88 lb butt at 7:00 am running around 255 (sometimes hotter sometimes cooler) on a smoke vault 24. I wrapped it at 160 around 4 upped it to 275 and was only at 167 by 4:30. I have never gotten one done on time in this smoker.

One thing I find strange is that my Maverick probe (which I've tested in boiling water a few times, but not before this smoke) always reads way hotter than the thermo in the smoker (which I know you can't trust, but when it's not being used it's right on to the outdoor temp.) I had the smoker on high to get back to temp after wrapping and the maverick and smoker were reading pretty right on. I backed the heat down to get it to start level out around 260 and the maverick kept rising slower, and the smoker started dropping until it was reading about 215 and the maverick was reading 270.
