Hello everyone! I did a short smoke today with a whole mess of Chicken. the Wife wanted some chicken thighs smoked for some enchiladas Monday and we were gonna have Barbecue drumsticks for dinner. So i smoked some of both with a few other things and here is how they turned out....
The thighs for the enchiladas....These have be skinned. Seasoned with pink salt only.
The next is some BBQ drumsticks with my candy apple red sauce that has been set up for 20 minutes in the smoker and also skinless. (we don't care much for chicken skin)
They had been in a brine with creole butter for 3.5 hours.
The drumsticks we have already eaten and everyone loved them!
