Broilkig Propane Vertical Smoker TOO HOT!

I'm a newbe at this. I got a Broil King Propane Vertical Smoker, model #923614, for Father's Day. I've been really looking forward to "smoke'n"

Assembled it per Instructions Checked all Connections, Ran it on HIGH to burn off Manufacturing residues. all good.

Tried to season it with no meat inside. and was never able to get the internal temp to stabilize below 300 deg F.

Not a good smoking temperature!.

There are no adjustable vent at the Bottom (Just a fully opened one). Top vents fully opened.Chips in the box, no water.

What have I done Wrong, or What can I do to get the Temperature down.

HELP!

Too much of an investment to kick to the curb.

Hey Canuck 1, try some water in the water pan and see what happens.  If you don't want to use water, washed sand or lava rock will help too.  Probably to get it down to the 225* range you may need to install a needle valve.  Search needle valve mods in the search bar up top.   Hope this helps, keep on smokin'.

Hey Jasper 7,

Thanks for the advice. The Water was a definite must.

In desperation, I ended up dropping into a local BBQ store and "Grilled" a sales rep for 20 minutes. He was very good and explained a lot of the finer points of smoking that I had no clue about. Water and vent adjustments where only a couple of the beginner mistakes I was making.

In the end, I was able to hold a reasonable temperature range around 240 deg f. With that hurdle surpassed, I attempted a Pork Tenderloin seasoned with Jeff's rub. Pulled it off the grill at 160 Deg.f internal temperature after almost 2 hours. Not bad, moist and tender, and the rub+smoke gave it a nice flavor.

Thanks again,

Canuck 1
