Wow and excellent site for layman's understanding. I have done things the same way, because its what I read or was taught. I never really understood some things.

The University of Georgia has a great book "So Easy To Preserve" for $18 plus shipping (discounts for quantities) that covers everything you ever wanted to know about canning in glass (not in metal cans), freezing etc.  It's worth every penney and then some.....

 

Just search for the title and you'll find it.

Ahhhhhhh........ see in my house, Mom's house and Grandma's house it was always the "Ball Blue Book". Its just what you wee brought up around, I swear by their pickled beets....LOL

We have the Blue Book and use it, too. 

 

Our sister in law is a recently retired Cooperative Extension agent who specialized in nutrition related things.  She showed me the So Easy To Preserve book during our visit to North Carolina last week.  After about a half hour of reading through some of the info in it I ordered a copy.  It goes well beyond the Blue Book.

Am I looking up the wrong book? I just searched on Amazon and the book is $94.99?
