Carrots, Pickles & Spiced Peaches

I would like to start by saying, experience brings knowledge and applied knowledge ...... wisdom! I was gonna say that age brings wisdom but I know too many old fools. 

First, I made SmokinAl's refrigerator garlic dills. I didn't have enough fresh dill, I had to suppliment with dried dill. And since I used pint and a half jars I had to rearrange the portions. AND I sneaked in what some Black Mustard Seeds a friend sent me!

An Voila!


<Chuckles> There is also plenty of garlic and onion....ROFLMAO! So I am ready for corned beef or pastrami, or rye, or any sandwich... bring 'em on! Well in a couple a weeks.....LOL

I also for the first time ever canned some carrots. I know, why you say? The carrots are seriously HUGE, I get 'em only one a year. And still you wonder why? Well because they are fast to heat up, a pint when added with so green peas feeds 6 to 8 folks unless they are kids. Make that 3 or 4 if kids. My carrots are almost sweet, and would be if not for the secret ingredient (Hot chili powder). They just take so long to cook though. So this way I can have them some this winter! Damn they are good.


Good carrots are a delight, and the only folks who will not love MY carrots (Cooked in ginger ale, honey and hot chili powder) are those just too closed minded to try them. And that's fine with me, I get more!

Hmmmmm.... what else, oh yeah!

Another first, I had plenty of peach freezer jelly, preserves, and processed jelly so I do dearly love a spiced peach. I used to have a friend who added 2 qt/s of spiced peaches to his holiday "Hot Rum Bowl". I do love them but never even thought of trying it. They are a pain in the butt. Heat to peel but not to cook, then heat again with the syrup before processing and heating again. BUT..........!! I tryed.


LOL... I felt like a Marine. I had to adapt to overcome....LOL Note the top three are darker? I can out of whole cloves, so they got ground cloves. Yes yes.... some cinnamon sticks, some allspice, I even added some of my special homemade peach juice. LOL Looking forward to these peaches come the holidays. BUt its the first time, ya never know.

I wanted to ask. has anyone seen or used these before?


It makes total sense, sometimes those old jelly stickers can mostly wash off but then its just a pain with sticky jars. Yes if you write on the lid, and throw those away each time its ok, but its such a pain to try and write on those lids even with a sharpie.

Oh, bet you are wondering about the wisdom thingie from back at the top of the post. I figured out it is ok to only put up a few cans at a time, I will not starve if I run out, the neighbors can can their own and a few made a one time is really no chore. You can can more tomorrow if you like.

Thats it, some tidbits in the cabinet and the reefer for later. Looks like I need to go start supper!

Not that much, but thanks Dave. I used to can a case at a time. Poor Mom finially got where she told Pop to leaved the buckets out and the back porch and she'd do what she wanted to do...>LOL My Mom was like Aunt Bee, and could make sweet pickles to die for! 

I am just getting to be a weenie baby.
 
Points for the wisdom Foam! I have everything I need to start canning except time. I'm looking forward to going at it again. I used to help dad with it.

I think you may be slipping though, you complimented Marines. You better be careful or you may end up guarding a gate!
 
It all looks good my friend,my cukes are just starting to flower.Beets are getting bigger.

I have used those labels, but they dissolve in water.

So I'm not sure how well they would hold up in the fridge.

Since my pickles are refrigerator pickles, not worried about a perfect seal, I reuse the lids.

I mark them with a sharpie, then wash it off with Dawn, for the next time.

Its as its supposed to be, most sailors respect Marines.... without yall they would use sailors, and everyone knows skilled sailors are much harder to replace than Marines..... Just sayin....LOL

Just jerkin ya chain man. Everyone knows two sailors will fight till the Marines show up then its Marines vs, the Navy till any other branch or a civilian shows up then its back to a joint forces attack.

I always loved history, Do you know why the Marine offiicer's have the "quatrefoil" on the top of their cover? I started with actual knots, it was so in the days of big sails in a battle Marines & snipers in the sails could tell who their officers were. Or so I have been told. Some of the terms and language and ...well history is really interesting. The whole 9 yards started in WWII by pilots. Etc.

As to the gate, we didn't make any friends one night we stole one at Rota Spain that was supposedly guarded. LOL... Security was tightened the next day, there was a Capyain's mast, we were all restricted to to the boat for 90 days, 'course we put to sea on a scheduled 110 day patrol two days later. LOL

Well I tried the labels, but in the wrong place. I can assure you they will wipe right off though with a little moisture. I use lots of plastic squeeze bottles, like the old dinner catsup bottles. I keep finishing sauce, simple syrup, BBQ sauce, etc... well when I canned those spiced peaches I had some syrup left and I had cooked the peaches in it, so I added a bit more water and sugar and spice to the peach juice and cooked it down. This is really good on a hot summer evening in Iced Tea. A sweet spicy peach tea. LOL, Nawww... I ain't from the south...LOL

Anyway, I usually use a sharpie so I know what is what in the squeeze bottles but it doesn't wash off. I put the label on and put the bottle back in the reefer. It was holding great. Last night I made some tea to try it, and set the cold bottle on the counter while the tea steeped. When I came back, due to humidity the was that small puddle of water on the counter with what can only be claimed to look like a couple a spitballs in it....Roflmao!

Note to self, use on canned goods that will not need refrigeration after opening!

I love pickled beets and have the best recipe if you have not tried pickling them before. OMG I do love pickled beets.
Kevin I have been making Pickled Beets for ages,this is the first time I actually planted some that I may be able to harvest.If you want to share your recipe I thank ya You never steered me wrong

Richie, do you have a "Ball Blue Book"?

NP, I use the blue book's beet pickle recipe. I use a lot of the Blue Books recipes. So did my Mom, so did my Pop Mom, and my Mom's mom.. Its a very well used book. Its Chow chow is awesome.

I still have not mastered 21 day pickles though. LOL

As far as I've been taught your history of the quatrefoil is correct. Although I've also heard officers who know they were not liked wouldn't wear them in combat! I'm a big history fan too. I've become a fan of exponential development; history/technology is not linear and we are at the "S" curve of advancement where exponential growth is going full steam.

Awesome story Foam! Write a book! Id buy it! I've never stole a base gate and I never had to be on s ship for more than 30 days at a time, how'd you handle 90? I figure You guys are a great taxi service!

We just got our first peaches from a fruit stand we passed while travelling. I canned peach pie filling but I might try something like this with the next batch.

Points for inspiration.

LOL...we enjoyed our service time. Sub's are extremely tight crews, you have to be, no questions asked. There is no rank nor uniform at sea, only the respect for your knowledge.  We worked hard and we played hard. But we were squids. Heck we streaked Cape Canaveral back when it was Cape Kennedy. We were there doing the first Polaris Missile test shots. The old man was great, still is (we all still keep in touch), but we sure kept him entertained. LOL  One of the guys stole all of our clothes while we were streaking and we had to make it back to the boat while swinging in the breeze! We stole the ship's bell off a brit submarine after we got their topside watch drunk (those guys were still getting a grog ration!), etc etc etc LOL We were professionals at work though, if you were not you didn't stay, hey we were awarded 3 MUC's, a PUC. But we still had a submarine sailors traditions to uphold...LOL Those always got us in trouble. We always got bailed out, hell they couldn't eat us and didn't wanta keep us.... But now they are just really amusing stories to remember and discuss among ourselves.

Maybe thats why I have always been half wild man!

Thanks big guy. Just yesterday I made some more of what we call freezer jelly. Its what we most like because of that taste. But it didn't make, don'tcha just hate when that happens? I used to just throw it out. Now I use it for flavored syrup for Belgium waffles..... Now thats some damn good stuff!

I have about 2 doz. perfect peaches skinned, pitted, and in absorbic acid water, I need to can them. Maybe tonite.
