Father's Day trio: prime brisket, pulled pork, smoked steelhead (warning: pic intensive)

Tired of the commercial buffets for holidays, we decided on doing our own after a disastrous Mother's Day. Pork shoulder was $1.78/pound, the prime brisket was $2.59/pound, and the steelhead most expensive at $6.99/pound.  However, even with that, we came off better than a single person cost at the buffet.

Brisket ready to rub and rest


Into the Traeger with probes in the flat and point as well as a grill level probe at the far end


Sliced and ready to eat


Crisped up the thin part of the point - the missus just loves it this way, and I had to convince her to save some of the point for sammies


Meanwhile, pork shoulder in the SRG


I really like how quickly you can make delicious PP in the SRG in such a short time


Pork pulls like butter squishing through your fingers - makes a great impact when pulling in front of the guests that have never seen pork being pulled


... and on another cooker, steelhead (skin on) smoked with GMG fruitwood blend


Our friend Gary wanted a hoagie with pulled pork on one half, and brisket on the other. We do the PP with cheese and caramelized onion. The brisket is slathered with home made BBQ sauce


Randy wanted a plate with brisket flat slices, some of the point, and pulled pork with sides of caramelized onions and sauce - a real meat lovers plate!

Looks like quite a conglomeration of cookers, there. Love the outcome, meat, meat and some meat. If you hadn't mentioned the missus, I would have thought it was an all guy affair... Thumbs Up

How was the Steelhead cooked? Smoked or grilled? I'm no fan of fish, but the Mrs likes Salmon and I owe it to her to make it more. I have grilled it. If it were smoked, what sort of temps are we talking about?

Thanks for the comments, SM!  lol, I know what you mean about an all-guy event - thought about that myself, but the wives liked the food as much or even more than us guys

The steelhead was smoked using fruitwood pellets (GMG) in a Big Chief of all things.  To tell the truth, just about all I do on the Big Chief these days is that dinner salmon, and there are no temperature settings on that simple unit. All I know is that it cooks the fish perfectly, and I need not baby sit it at all.

That all looks great. I would kill for a prime brisket around here, especially at that price! You put out some great looking food man! Points!!
Thanks worktogthr!  My knees nearly buckled when I saw that prime brisket at the price, especially at Costco!  I'd actually not seen a prime brisket before that, so I purchased several, and still have two in the freezer for a good day.

Thanks Al!  My wife gave me a simple choice - go to one of those awful Father's Day buffets we have here or do our own cook and invite the usual friends. The choice was simple for me because I love to practice cooking, and as luck would have it, everything turned out just fine.

Holy crap. Yeah that's definitely better than any Buffet around. Drooling is not an option. It just flows. Beautiful dinner. Everything looks awesome.

Thanks, man! I got lucky that day - you know how it goes - sometimes there are days when everything goes right - rare, but makes the bad days not so bad.

I couldn't believe it!  Normally Costco in my area offers good quality meats, but at a prime (no pun intended) price.  I purchased three because that is all the room I had in my freezers!

Thank you RHD!  I know it is a bit of overkill, but I love it all, and some of our friends don't like fish and others pork so this was a perfect time to cook it all.  After all, it IS Father's Day!
