BINGO, I nailed it tonight. Started smoking two porkbutts this morning pulled them off and they were done perferkly for me anyway. I am impressed with the pellet grill only down side is temp control. Set it at 225 and it would climb to 250 or set at 235. Figured it may be the pellet settings. I am still learning. Here is a few pics the food is served at our ffice party tomorrow.




 
Tasted great put our BBQ sause on it sweat in the front a littel heat in the back. Pellets are Gourment (Spelling) from lowes I desire Apple wood pellets and will buy soon. These we got at the same time we bought the grill
 
Those temp swings are not bad at all. I wouldn't worry about that one bit. I love my pellet gill. I think the smoke flavor from a pellet grill is fantastic. I supplement with an Amazen tube smoker, but the clean burn from pellets Is great.

What kind of pellet grill do you have??

I had the gourment (Spelling) I desire Apple so will order from Amazon. I love the grill and thanks I am still learning aboutthe smoke setting but as far as today it was perfect wife watched applied apple juice throughout until I ws home heck she added pellets too. After 10.5 to 11 hours I pulled it and wow
 
I'd say about two and half to 3 pounds never looked at the weight just the fat and price.
