Slim Jim Straws (copycat) Didn't Work

Got 5lbs of 80/20 GB. Mix is AC LEGG #116 and 1 tsp cure 1.

Yup making slim jim straws.

Finally making a dent in some of my sausage supplies...whew

Cover/fridge for stuffing/smoking tomorrow. 15mm collagen.

Was getting ready to get these in the smoker when i noticed a plug failure at the pole in the park. The maintenance guy had to go buy a new gfci plug and it took him while to get it installed.

SO

Got the stick stuffed last night and in the smoker this morning.

Did 2 batches 2.5lbs ea. Sheep and 15mm collagen.

I like to keep my area wet when using natural casings (just my way)


Not my best stuffing job. Yes i do poke the natural to get some air pockets out.

As far as the hole in the middle for the straw, i have another way.

 
Well the sticks turned out great.

I didn't use the bamboo skewers while smoking and i don't like he drill bit idea. Re thinking the hole thing.

Here are the sheep casing ones. Maybe just plain ol sticks for now.

 
My only complaint is the thread title is misleading!
Probably should edit it so poor newbies don't look at the thread looking for meat straws only to find out there are no meat straws...

My way didn't work as when i took the skewer out of the few i did the meat collapsed into the hole. Bummer

So they just came out as regular sticks. I did see them online and they are a few $. Im going to find a way to make these without the cave in.
 
I'm thinking to cut to length, freeze then use a new drill?

I tried this way and the meat didn't want to come out.

I think freezing or partially freezing would be best.

I used to use my sawzall to fillet frozen albacore tuna. Worked like a charm until the yellow jackets caught wind that tuna were being cut up.
