Hello al I am relatively new to smoking on my own, but I used to work in a BBQ restaurant with a big brick pit. I currently live in Florida, but have roots in Tennessee and North Carolina. I own a Redhead charcoal water smoker. I have used several recipies from this site so I decided to enroll. I have already smoked a pork roast and baby backs which both turned out awesome.
