Thank you for welcoming me to this site. I am a retired fireman and have been smoking meats for many years both at the firehouse and home. Mostly using electric smokers, much easier at the firehouse, but conventional wood and charcoal as well. I have been reading these threads as a guest for a while and appreciate all the experiences, good and bad, that you all have shared.
