I tried a Maverick probe years ago in some Spares, and it didn't work good, so I cooked almost everything else to temp, but my Ribs always went by time.

Then after reading Al's Thread, I tried sticking my Thermapen in a set of St Louis Spares, and I got different readings all over the place due to the thin meat with bones.

I gave up, and went back to the Time method. That way I don't have my door open so long trying to get the same Temp at more than one place.

Yours Look Awesome though!!  Shame Idaho is such a long drive!! :avatar3972_3:

Thanks Bear for the nice words & point, appreciate it ! These spares were pretty well the same thickness throughout the rack, so checking the temp worked out good on these ! Yea, PA to ID is a good ways between the two.... But if ya ever get out this way, stop on by ! You'd always be more than welcome !

Wow, those ribs look fantastic!  I have a vortex coming in the mail today for my father's day gift from my wife.  If you don't mind me asking the details,   Was that a 22 kettle? and how many coals did you start with and what cooking temp did you go at?

Thanks man ! Congrats on the vortex, I've sure enjoyed mine ! Don't mind a bit man ! Yes, my kettle is the 22"... Total coals for the cook was bout a full vortex, to start though it was bout 1/2 full ! IMO, the vortex is pretty conservative with fuel ! Cook temp was round 275-280*. Hope this helps, if ya have any other questions or if I wasn't clear enough on any answers... just ask ! Enjoy your vortex !
 
You know it never occurred to mt to ever check the temp on Ribs. But like I have said before I'm Old School,  First temp gauge (probe) i ever owned was 10 years ago. I learned to cook by time, looks and feel.  I guess what ever works the best for you Stay with it. About the only thing I use my temp gauge for is poultry and smoking sausage.

I understand where your coming from my friend, like you say it comes down to what works for each person ! Just wanted to try something different as I've never foiled ribs before, not even the big beef ribs that some folks say to foil ! I still go by time on a few things, but use my instant read to check myself ! LOL

Thanks so much for the info! So you filled half the vortex with unlit and then poured half a chimney of lit coal on top?

I love the vortex so far. Done two types of burgers around the ring and then seared them to finish! Incredible how great the searing capability is! Tomorrow is some chicken wings and legs for dinner. Can't wait! On my 26 I am dying to try 3-4 spatchcocked chickens around the outside. Or a whole bunch of steaks or tri tip.

No prob man, that's what we're here for is to help each other out ! Thumbs Up I started with a full lit chimney in the vortex (bout 1/2 full), then added as I needed ! I'd not done a long cook yet with the vortex & wasn't sure what to expect ! Next go round, I'll take another approach... was just a bit cautious on this one !

The vortex is a great addition to the kettle, I'am amazed at how HOT it gets with the searing opening ! WOW, does it get hot ! Hope your chicken went well, I load up the vortex all the way with lit coals & it makes some tasty chicken with awesome bit thru skin ! Thumbs Up
