Fresh kielbasa?

All my Life, 54 years old...Grandpa and Dad made an average of 100 Lbs Kielbasa mix, Cure and all, for sales in the store. 75 Pounds got Smoked and the remaining 25 Pounds sold as Fresh. It is great simmered with Sauerkraut, Grilled or even Pan fried. Kind of kills the point of being Fresh Kielbasa if you Smoke it...

A German butcher here offers it both ways ($1.00 more a link for the smoked [emoji]128533[/emoji]). I alternate between making a fresh batch & a smoked batch. We usually fry it with sliced potatoes & onions, but fried kraut is great with it, too. Or you can grill them and toss them on buns like a brat.
 
I only like smoked kielbasa... Wife's family is Polish so, it's a staple food. We usually just boil it then serve it in chunks that you cut up yourself and eat with ketchup or whatever.
 
I have smoked Kielbasa quite a bit when we lived in Wisconsin and could get it fresh.  Keep your temps low so they don't crack.

I liked fruit wood the best.  Like Jimmy said, add some fresh Kraut, some good polish mustard and you are set!!!
