I am hosting a party next week and the menu will be Beef Enchiladas and Green Chili Chicken Enchilada casserole . I want to get the meat smoked and pulled this weekend then put the recipes together next Saturday morning so all I have to do is pop everything in the oven for the party . Now I always brine my whole chicken using Jeff's Beer Brine ,does anyone know a fairly simple brine that will give the chicken an good Mexican flavor ?
