Smoker from the UK here checking in.

Hi all

 

Been a fan of smoked meats for a number of years and as soon as I got back from a cross-country trip to the US last May, I bought myself a Weber smoky mountain (18.5") and have done many racks of St Louis ribs, two pork butts and chicken. All have turned out incredibly well with more than my fair share of happy eaters. This year i'm moving up to brisket and have just purchased a grain fed packer from Tom Hixson, a British butchers based out of Smithfields meat market in London although i'm having a few "issues" with it but thats a different story!

 

Look forward to being part of the forum as the UK rolls into its very short summer period.

Hi WS and welcome to the forum. Which part of the UK are you from?
 
Great to have you on board. There are a growing number of us this side of the pond and Steve (Smokin Monkey) will give you a pointer to the UK part of the forum where we try to tackle some of the challenges that are more specific to the UK and Ireland. It is all part of the main forum and so wherever you post in SMF it can bee seem by all.

 

The WSM is a good all round smoker and the feature with almost every team at the competitions. I used to have a WSM amongst my smokers and it was fantastic, but now have a ProQ equivalent. 

 

With briskets I have has very mixed experiences buying them online (usually not good ones) but I have found that my local butcher (who supplied much of the local restaurant trade) knows exactly what is needed and usually comes up trumps. It may be worth asking around to see if any of your local restaurants can recommend one for you.

 

Don't forget that a smoker is for life - not just for summer... I hope you smoke on yours all year round Thumbs Up. Christmas at our house is not the same without hot smoked turkey.

Hi both. Thanks for the warm welcome!

 

Wade, I've lived in London for 8 years but originally from Stratford-upon-Avon. I have put off using the smoker this past winter with it being my first year of smoking and I'm still mastering the WSM. Think I'll try a few winter smokes when the summer ends (in about 3 weeks knowing our luck). Lots of things I want to try, particularly a chinese 5-spice rubbed whole duck over cherry, which I'd rather do on my own or with a select few friends rather than a whole host of people just in case it goes wrong. Think that's one for when the bbq/party season in my house is over. I'll head over to the UK section. Looking forward to meeting other, more experienced members with the same interest.
