Corned beef x2 and Trout

Picked up a bunch of corned beef on clearance so i figured i would smoke two. Gothem in water soaking now.

I will also be trying my hand at some trout on my ECB so hope they turn out. Going to use very little cool with the apple chunks to try and keep heat low. Should i use water pan too?
In brine right now.

Any advice on the fish would be good have about 16 small trout fillets and two whole small trout brining.
 
I will post more pics tomorrow when I start the Corned Beef. The larger one is 4.8 lbs and the smaller is 3.4 lbs. Soaked them for about 4 hours in cold water changing the water every hour. I covered in yellow mustard put the rest of my steak rub on them and then added fresh black pepper, garlic powder, and Spanish paprika. Wrapped them up and leaving in fridge over night. sure can't wait to eat them the last one (also my first) was very good. so stay tuned Q View to come.

I'm not big on Trout but those fillets look damn tasty! Good job.
I am not a huge fish eater either but I like smoked fish. Thank you for the compliments.
