I'm using a college dorm fridge. I have it at 52 deg and 50 humidity. Tried the pan of salt water to raise humidity to 70 but no luck stays at 50. The readings are with an empty fridge if I hang the sausage in the fridge will the humidity go up.

I think your going to have to provide more info on what your going to cure in the fridge. What is your process & what type of cure are you using.
Yes the R/H will go up slightly with meat hanging. Careful on the R/H as you can get case hardening pretty quick. Wont hurt you but makes a dark ring in the meat just under the casing. On your fridge do you have the small freezer on top? That can throw off the R/H.
Yes you can disconnect most of them, some if you disconnect it will also mess with the fridge part. Do you have temp and humidity controls? This can help regulate.
