Any ideas

I dehydrated these at 160 for 6 hours. These are turkey breastfeeding with salt as preserve. New at this so can anyone give ideas on how to prevent this. Going to try celery powder but not sure how much to add per pound plus was told to add 1 teaspoon per pound of sea salt. Trying to get it shelf stable without using vaccum bags. Mold starts on a few pieces
