This is my 3rd brisket I have ever done, first one came out pretty good, second one was a complete mess, this one actually shined.

I don't have any of the prep work, but this was a 12.5 lbs brisket.


Just put it on the smoker.


Pictured above this is about 7 hours into it.


Pictured about is about 12 hours into it.


Got my burnt ends about done.


pretty good smoke ring inside and good looking bark on the outside.


Nice pull apart on the slices, I am really happy with the way this brisket turned out. I thought the flat was a little dry to my liking

but the burnt ends were spot on.
 
Yes I did end up wrapping it for about a hour or so in the end, just because I was running out of time, I put it on at midnight, and it cooked for 16 hours, it was a long night.

Thanks everyone, it did have some good flavor to it, another reason I thought it dried out a little bit is, we had some folks stop by real quick that wanted to try it, and it was resting, so I opened it up and gave the guy and gals a slice off of the flat and then wrapped it again and let is rest, being it wasn't for a competition so I didn't mind.  The Burnt Ends did not last long though.
 
As time goes by in your eyes you will get better. Don't worry if one wasn't the best one. Look at what others do here and try them. Or blend in with your style of smoking. My last one turned out awsome. Changed some things and added in some things. You'll see. We are our own worst critic
