Saturday I went to the meat shop looking for "whatever looks good", and walked out with this



I let it come to room temperature and seasoned both sides with Grill Mates


I preheated the Weber S-330 to 400deg ..... left and middler burner on, right burner off. I then cooked the meat over indirect heat


I monitored the internal temp and flipped when the meat was 90-95deg


Once the meat is close to medium rare I turn on the sear station, put the meat on the left side of the grill and reverse sear


Gotta be careful. With the sear your just wanting to cook the outside and the internal temp is gonna rise fast


When meat is lower 130deg. Remove from heat and let rest while you steam your fresh vegetables

The end result is this is one of the best steaks Ive had in a long time. Nothing magical ... Just buy good meat, don't over season and watch temps .... Sure is a pretty sight
