I have smoked meat for some time now. I smoked mostly on charcoal and vertical small smoker. I bought a MES and could not get temp to regulate so I the bought a digital MES what a difference it makes. I am smoking 2 turkeys and 2 pork ribs and some salmon toning. So I enjoy smoking meats of all sorts I am not a PRO but I always look for a better way.
