Yea I'm not overnighting nothing. Putting brisket on tomorrow at 6-7 be eating at 6-7 15# brisket I can have done in 10 hrs butts about 8-10

Any of you pros have any idea of the target temp for venison hindquarters (sliced) bone in and boneless? They are 150 now, butt is 140..
 
Looks like 140 is about right! Pulled them , wrapped the in tinfoil and letting the rest!!
 
I am doing a corned beef roast didnt have to fire up the smoker till 7:00 am

I've got like Myron,I ain't baby sitting a fire all night, and if I can't get it done in 10-12 hours it ain't getting cooked.
 
There is still nothing that needs cooked over night. And a guru won't throw another log on will it. Charcoal is for grilling hamburgers and pellet smokers well don't get me started on that lazy ass cooker.
