Hello everyone, I'm new to smoking and fortunately found this forum.  Looks like it will be great.  I am from Alabama and I sure have alot of questions. We have a 30" Masterbuilt smoker with the window (some like this others don't but I figured I needed to see what was going on).  Will be seasoning it today and then ready to cook some ribs first.  Looking forward to learning alot from you folks. I'll be putting on ribs shortly and will be using the meat probe that came with this smoker.  Anyone have any suggestions about this meat probe?  Where exactly can you put the probe in the rack to get an accurate read?  Another thing on this new smoker, how does the remote seem to work with those that have used it?  Thanks for letting me ask three questions in one thread!

Get another probe,the probes are not very accurate 

I have the new MES 40 BT
