Hi everyone, first i must say i havent been on here for a long time...its good to be back!
so a friend of mine has a 13 lb. pork belly with skin on and he says he has done this before....he cuts slits in it and inserts whole garlic cloves throughout with peppercorns and he wraps the belly around a pork loin and ties it up....well he is going to prepare this tomorrow and wants me to smoke it at our cookout saturday....im smoking 3 pork butts as well. The pork butts are a breeze, I have done many. My concern is the pork belly. i have never smoked one and being wrapped around a pork loin it seems to me that the belly would be done before the loin....I DONT KNOW hahahaha, so i figured i would come to the experts and maybe someone could shine a little light on my fat belly lol.....how would i go about this, i searched and didnt see anything with the belly wrapped around a loin..... i have a 22" WSM with the Rocks BBQ Stoker and a smaller cookshack, any help is appreciated....thanks in advance, George.
