Perfect weekend for wood-fired pizza

We love pizza, and the missus came up with a flavorful variation on crust.  After rolling out the dough, she paints it with olive oil, and gives it a generous sprinkling of Himalayan salt.  Then into the oven to pre-bake the crust.  After it is browned, out of the oven, flipped over, and topped with whatever strikes your fancy.  When you take a bite of the crispy pie, your tongue immediately senses a mild burst of the salt immediately followed by the full flavors of the toppings.

Grinding salt onto the olive oil based crust, then into the oven to pre-bake a crisp crust.


After flipping the crust so that it is salt side down (baked side up), adding the toppings - white sauce, spinach, mushrooms, grilled chicken breast, and caramelized onion (plus plenty of cheese of course).


Back into the oven to bake the toppings


Not part of the baking, but definitely part of the party. We have a problem with bugs in north Idaho and for $30 I found this netting that sits atop your outdoor umbrella, making a perfect place to enjoy your outdoor cooking without yellow jackets, flies, etc.  The view is a bonus.

Thanks Bear!!  I managed to get in at the right time nearly 30 years ago when folks around here didn't like the 20 minute drive into town.  Today I couldn't afford to buy the place.

We're moving the appliances around because of a planned deck remodel, and like the grill in the new position because we can sit in bar chairs while grilling and enjoying a cold one.

My son and I built the pizza oven a few years ago from a kit, and I still have not finished the outside, mainly because my masonry skills are nearly nonexistent.  However, we have improved on our pizza making skills each season!

We love pizza, and the wood oven adds a slightly smoky taste that you just can't replicate any other way.  It is also a fun way to cook, because you have to stoke the fire just right else you burn the pies.
