I'm new to the forum but not new to smoking - been doing it for 30 years. I live in Indonesia which can be a bit of a challenge for getting equipment, charcoal, wood chips and good meat - BUT that means I have to improvise! So, being a kettle hater, I built my own smoker/grill/barbecue/rotisserie ( 316 Stainless ), I've experimented with tropical woods and cooked some strange bits of animal protein. I've also used my "Va bene" ( Italian for 'Take it easy') BBQ to make bread, desserts and bacon. If anyone in the area needs any tips, PM me. I live in Bali and am even considering opening a BBQ/Smoking supply shop!
