Sweetened Salmon, A Quick Smoke

She Who Must Be Obeyed showed up with a nice sockeye salmon fillet that she wanted for dinner. So I needed to do something quick.

I like a touch of sweet/savoury on my salmon.

I mixed 5 ml (1 teaspoon) each of honey, mayonnaise and prepared mustard.


I spread that on the fillet and then gave it a generous sprinkling of Louisiana Grills Tennessee Apple Butter.


I put it on the pellet grill that I had preheated to 350 F.


After 25 minutes, it was cooked.



We had it with a nice green salad and some garlic bread.


The Verdict

This was a very tasty piece of salmon. There was a nice spice/sweet balance and She Who Must Be Obeyed approved.

I just use EVOO & rub with Cajun spice.

Salmon looks great, i have only tried it once. Never grilled thou. Gonna have to give it a shot.

Don't you think that 25 minutes at 325 degrees is a bit much. Especially Canadian Sockeye, which is more lean than other parts of the world, try reducing that time to 15 minutes but preheat to 350. See what it yields. I think you'll be amazed at how moist and juicy it'll be. But otherwise, it looks delicious and amazing. Can't go wrong with honey mustard, and some sweets :)
 
I like my salmon done more than is de rigueur in most places. The missus is the same. I have never been able to get into the crispy salmon skin either.
