Again Owens BBQ Stick mix. Honey bbq. Marty has some great mixes.

 

15mm edible collagen casings. The rigs are the shirred marks (compressed casing) they will come out.

 

This batch is elk and gb cut in.

 

 

 

 

 

 

Doing my normal times and temps starting at 130 thru 165

Done here and ready for the BBQ On The River in Sept, Paducah, KY. Our 6th year going. I had to buy a larger igloo last year, had 50lbs of smoked goodies for friends. We reserve the whole sidewalk for the bbq in front of Shandies. Last year there were 20 of us from all over, Ky, Ill, Pa, Tx, Fl and Al. This year it sounds like there will be 30. Been making and stocking up on goodies, smoked and dry cured.

 

Yes they freeze well with no freezer taste if you know what yer doing....EH

 

 

Elk honey bbq cut and vac sealed. 7 packs of 10ea. I might have to make more.
