I am totally embarrassed to say I have yet to do the smoking part, But this Brine and Grilled is the best I have ever had.

I will get around to smoking, but tonight  Grilled Salmon


Ready for a rest in the Fridge


After 5 hours in the brine, a little Butter Crunch Lettuce from the garden

Wife got home and picked a few more veggies 


On the grill, a little EVOO and a bit of Tony's

Sounds good.  I am going to try some smoked salmon chunks tonight.  I brined last night, and let sit out in the fridge to dry today while I'm at work.
 
We love smoked salmon.

No brine, just coat with EVOO and dust with Cajun seasoning.

Smoke at 225 for about 45 minutes (don't overcook).

Good stuff.

I'm sure yours will be awesome.

Can't wait to see it.

Is it Bear's brine you are using?  How long?   Was the Salmon previously frozen?   I would be very concerned about using almost any brine for Salmon that is simply grilled but since I have never tried it.........  Looking forward in seeing the results.

Yep, Just follow Bears instructions (I posted his link)  but I grill it instead of smoking it. This is about the 5th or 6th time.

Gary, That Salmon looks great. I have never smoked any, but want to. Cindy usually grills it on the gasser with a little SPOG and maybe some oregano. Our standard plate is tossed salad and baked sweet potato. I really like the combination of baked sweet potato and grilled Salmon. I may need to try some of the brine, if I can get the filets away rom Cindy.

That's sure nice looking salmon, Gary.  I love grilled salmon, but have never brined it.  Just some S&P and lemon, and onto the grill.  It just never occurred to me to brine anything I planned to grill.  I'm going to have to give it a try--it will just have to take a number along with everything I'm going to try.
