Brisket on the new stick burner w/ q-view!

Just finished building my new smoker so I decided to christen it with a brisket. Didn't expect much but it turned out to be my best brisket so far.

Here's what I'm cookin on, made out of a 20''x50'' piece of pipe, reverse flow, square firebox.


Got my fire started, chimney full of lump and a split of oak and cherry.


Holding steady at 250F and getting some excellent TBS


Got a prime packer from costco, trimmed and seasoned with just salt and pepper


Here's after about 7hrs, got some nice color, IT was at 160ish


Wrapped in some butcher paper and let it go until it passed the probe test. Took almost 13hrs in total


So good! Best one I've made so far. I'm a stick burner convert for sure.

That's a great looking smoker.

Fine brisket too.
 
Sweet smoker... and brisket. Yum! What do u have planted in the raised bed behind the smoker.. mators??

13hrs...Sheesh that brisket must have wanted you to bond with your smoker :biggrin:
