I got a upright electric smoker. I am trying to get some ideas on how to keep it clean.

the bottom is getting funky from the meat dripping when smoking.

I tried aluminum foil on the bottom rack to catch the drippings (worked great) but it blocks the heat and caused the meat on the outter edges of the upper rack to burn.

Blocking the heat and concentrating it up the walls of the smoker.

Could put the foil under the burner, but then I get drippings on top of the wood chip container.

Any other ideas??

The MES Units like I use have a full width water pan in the bottom, above the heat.

We just cover the Water Pan with foil, and change it whenever it gets real bad.

It's not a good idea to put water in a water pan in an Electric Smoker anyway.

I also cover the bottom of the smoker with foil.
